Frukt i maten


För en vecka sedan läste jag matsidorna i G-P och blev minst sagt fundersam. "Frukten delar matvärlden" löd rubriken. Recepten innehöll bland annat persika vilket osökt fick mig att dra paralleller med september månads Paper Chef som jag var värd och domare för. Bland deltagarna fanns en ovana att blanda frukt i varm lagad mat. Men de antog utmaningen och verkar själva blivit positivt överraskade av resultatet. Månntro var denna artikel en ren tillfällighet?

Nej skämt åsido. I artikeln påstås att frukt i maten, salt och sött, är en "tvättäkta vattendelare - att älska eller hata" och fortsätter om "plågsamma sjuttiotalsminnen" men frågar också varför? I vissa världsdelar är frukt lika vanligt i maten som vi här använder rotsaker. Jag frågar mig också varför. Hur kommer det sig egentligen. Och liksom artikelförfattaren riktigt poängterar så äter motståndarna till frukt i maten både päron och druvor till ostbrickan. Salt och sött. Jag förstår inte vad problemet är.

Bilden ovan är tagen ur mitt fotoalbum med papperskopior och visar en currygryta med kokt fisk på toppen. Röran består av kokt potatis som stekts tillsammans med lök, rött äpple, curry och förmodligen var det crème fraiche också. Jag är inte hundra på alla ingredienser då bilden är tagen för 13-14 år sedan. Jag kan gå tillbaka ännu längre och minns ett mellanmål jag ofta hade med på resor mellan gymnastikträningarna inne i stan vilket var tonfisk, syrligt äpple (ibland ärtor) och majonnäs. Jag har aldrig slutat äta frukt i maten utan snarare tvärtom. Från att äta ananas på pizzan äter jag både äpplen, päron, melon, nektariner, persikor, aprikoser, gröna russin och så vidare i huvudrätten. Både varm som kall. Likaväl som köttätare kan tycka jag går miste om mycket gott som vegetarian, tycker jag alla som stelbent vägrar blanda frukt och grönsaker i maten också går miste om otroligt mycket gott! Jag hoppas aldrig jag slutar använda och blanda frukt och grönt i alla möjliga kombinationer.

Rödbetor rödbetor rödbetor

En del av er som läser min blogg med jämna mellanrum har säkert förstått att jag gillar rödbetor. Förra veckan sålde dom rödbetor för 3:95 kr/kg! Ni fattar att jag ätit rödbetor mest varje dag nu. Kokta, stekta, ugnsbakade, rårivna, inlagda, rödbetssallad, rödbetschips, och en variant är att koka några rödbetor och sen spara dom i kylen. Då har du "snabbmat" ett par dagar framöver. Plocka ut ett par stycken, skär i bitar och stek med lök och kryddor i lite olja. Tillsätt ev havregrädde eller kokosmjölk och lite bönor. Gott också att blanda i färsk bladspenat. Klart! Till helgen är det jag som kokar en till stor kastrull med rödbetor!

Maten på bilden ovan är från en fredag eftermiddag för ett par veckor sedan. Då lyxade jag till det med färsk tomat och buffelmozzarella vid sidan av. Jag rostade först lite kryddor (typ spiskummin, svartpeppar, koriander och svart spiskummin) i torr stekpannan som sen mortlades. Tärnade och stekte efter det ett par överblivna kokta potatisar tillsammans med färdigkokta rödbetor i olivolja. Smakade av med salt. Klart!

Macarons (att skämmas lite över)

Allting har alltid en första gång. I fredags var första gången jag bakade macarons. Ja nä vad säger man? Det blev inga skönheter att tala om. Knappt ens värt att fota heller men som första gång för detta måste jag bara dokumentera. Vem vet? Det kan komma att bli fler. Faktum är att kvinnan som bott tio år i Frankrike gav dom ett mycket gott betyg och tyckte de var "perfekt konsistens i mitten".
Eftersom det var första gången ville jag inte trixa och hålla på med grälla färger och speciella smaker utan körde helt enkelt men vanilj. Dessutom är jag inte heller särdeles förtjust i artificiella färg- och smaktillsatser. Tanken var ändå att smaksätta smörkrämen med lite rivet citronskal men glömdes helt enkelt bort i min iver att till slut få smaka på dom. Störst inspiration till att baka macarons har Anne, vars recept jag använt, gett mig. Kolla bara hur fiiiiiina hennes små söta blåbärsmacarons, och lavendelmacarons med chokladfyllning är!

Nu är det väl så att mandlar ska skållas och malas men jag har varken mandelkvarn eller någon bra mixer som klarar det utan hittade mandelmjöl på Gröna Boden. Det var helt enkelt finmald mandel i lösvikt. Så använder jag även vanilj på burk och har inget egentillverkat vaniljsocker som Anne gjort. Jag tog helt enkelt två msk strösocker och ett kryddmått (eller var det så mycket som 1/2 tsk tro?) av mitt ekologiska vaniljpulver och vispade med äggvitorna.


Macarons - vaniljsmak (Anne's recept på engelska)
ca 30 (15 fyllda)

3 äggvitor, rumstempererade
2 msk strösocker
1 krm (1/2 tsk) ekologiskt vaniljpulver
200g florsocker
110 g mandelmjöl



Mät upp florsocker och mandelmjöl. Blanda samman ordentligt med en gaffel. Se till att inga klumpar finns. Vispa äggvitorna med strösocker och vanilj. Vänd sedan ner socker- och mandelblandningen. Fyll en strut och spritsa ut "duttar" på ett bakplåtspapper. Låt stå i 30-60 min i rumstemperatur så det blir som ett "skinn" på duttarna innan de ska in i ugnen på 180 grader i 12-15 minuter.

Låt svalna och bred sedan på smörkrämen gjord på 100g smör/1 1/2 dl florsocker/vaniljpulver eller rivet citronskal (du väljer helt enkelt den smak du vill ha på dina macarons) och en äggula, på en av halvorna och tryck försiktigt en andra halva på toppen. Klart!


Jag hade nog lite för lite smet i varje kaka som jag spritsade ut och fick fler än 30 men varför denna "ring" runtom istället för höjd? Hrm. Det säger sig själv att jag bara måste pröva igen :-) Men det lär dröja innan jag kopplar greppet om den perfekta macaronen!

Bladspenat i havregrädde


Det har varit en turbulent tid för mig ett tag. För många delar. För många sprickor. Bloggen har tyvärr fått lida en del för det. Dock har jag fått ihop ett par engelska poster och utsåg en vinnare av september månads Paper Chef. Som enväldig domare hade jag valt ett vegetariskt tema för tävlingen och blev superimponerad av alla fina bidrag. Verkligen inspirerande!

Nu är det annars så att jag är åter på samma praktikplats där jag var i våras. Och missförstå mig rätt nu, det är väl bra att vara där istället för att söka jobb, blogga och laga mat - men - jag blev så otroligt besviken ändå. Det är bara ett bevis på att jag fortfarande är utan riktigt jobb. Att jag inte trivdes där särskilt bra i våras och bad AF om hjälp, efter att jag fått hur många nej som helst, att hitta annan plats gör inte saken bättre. Dessutom, ytterligare ett bevis på att Sveriges arbetsmarknadspolitik inte fungerar. Trots allehanda åtgärder som t ex lönebidrag, nystartsjobb och allt vad det är, för att jag ska kunna få något som liknar en anställning och då framförallt en någorlunda lön, kunna tillgodoräkna mig ATP osv, så väljer arbetsgivaren att fortsätta utnyttja mig som gratis arbetskraft och dessutom cascha in några tusen i månaden för besväret. Det är inte riktigt den "arbetslinjen" jag hade räknat med i alla fall.

Som den värsta baksmällan ligger också helgens val kvar och molar och lite tappade jag matlusten. Det har ventilerats högt och lågt på bl a Twitter och fb och det är nu arbetet med valkampanjen börjar. Valkampanjen för valet 2014. Till dess ska jag försöka samla tankarna och fokusera på mat! För mitt i alltihopa har det också hänt något jag inte alls är van vid.
Jag har varit tvungen att slänga mat och hälla ut mjölk som blivit dåligt i kylen! Det är helt förkastligt och jag skäms verkligen. Därför blev det till att ta vara på den färska bladspenaten igår så den inte skulle hinna bli dålig. Som vanligt när jag höftar och gör något bara sådär, blir jag överraskad av hur gott det sen smakar. Så även igår.



Bladspenat i havregrädde
2 port

4 schalottenlökar
2 vitlöksklyftor
olivolja
250 g färsk bladspenat
1 1/2-2 dl havregrädde
örtsalt
svartpeppar
soja

Strimla schalottenlöken fint. Fräs i olivolja tills den blir genomskinlig. Riv eller finhacka ett par vitlöksklyftor och fräs tillsammans med schalottenlöken. Skölj den färska bladspenaten och vänd sedan i stekpannan/traktörpannan. Bladspenaten har en förmåga att nästan helt försvinna i stekpannan så var inte rädd att ta i i överkant med den färska spenaten. Salta och peppra och häll över havregrädden. Puttra på svag/medelvärme i ca 10-15 min. Det ska absolut inte koka torrt, men spenaten ska bli mjuk, så håll ett vaket öga till spisen. Tillsätt eventuellt lite mer havregrädde och soja på slutet om du gillar det.

Passar bra till kokt potatis, fullkornspasta, falafell eller lite stekt rökt tofu. Idag blev det t ex kokta rödbetor med belugalinser, fullkornspasta och spenatröran till lunch. En tanke som slog mig i dessa svamptider var att det nog skulle vara toppengott att steka lite svamp och blanda i spenatkoket.

And the winner is....

Wow, what a treat! I'm so impressed! You all did such a tastefull and creative dishes. Obviously there aren't so many of you out there who'll use fruit in your main dishes. I myself is no stranger to that. It started long time ago with banana and peanuts in a special chicken dish. During the 1980s we all ate pineappel on our pizzas. Later on, when I really got in to cooking food for myself I usally had appel with my fish stew. As a vegetarian I've become more and more accoustomed to using fruit in warm meals. I'm very glad for all of you that entered this challange and tried new combinations.

Well well, there is a first time for everything. This is my first time to compile all the enteries and contributions for Paper Chef #56 September 2010. You'll find all the entries here but I'll try to make a nice presentation too. After all, it kind of feels like you all have cooked for me :-) Now I have to taste them all and then I'll do my best to choos only one of all the delicious dishes to be the winner of this months Paper Chef.
I do appologize for beeing so late with my decision. It is election time in Sweden and I've been busy and very concerned about the outcome. We have a party political tradition in Sweden with about 7 (it might vary between the term of office) different parties in our Parliament. This election somehow has turn out to be more of a two-party system and Our Election Day is this comming Sunday. Only three days left :/

Sarah of Simply cooked made a Pumpin and peach salad with lemon grass dressing. I'm really impressed about this dish and I love the baby bok choi. Can't get those in Sweden. I do like that Sarah used all four ingredients in one and only dish! I also notised that she too use "handfuls" in her cooking. Me like. Just combine what you have and enjoy!

Prospect: The Pantry brought me Zucchini lemongrass pancakes with fresh peach salsa. This reminds me a lot of my own food apart from that Karen is such a better photographer than I am. I so like the simlicity and the beautiful colors. Karen is nice too, and caring about our cooking and ingredients skills. She gets a golden star for explaining how to use the lemongrass.

Wow! What else is there to say? Mike from Spiky Mikey thought it was a real challange with this months PC's ingredients. I'll say he stepped up to the challange and did a great job with his Pumkin Tagine with Couscous and a Parsley and Caper salad. I wouldn't miss out on this one just because the lack of a certian pot. A tajine pot is on my wishing list but I'll bet you can use this recepe in a ordinary casserole.

Then we have Tricia of Jonski Blogski who made a delicous Spaghetti Squash with Tomatillo salsa and Nectarines. Tricia were using both lemongrass and capers for the first time and I'm happy to have "pushed" her to doing that. That tomatillo salsa is very temting and I will definitely try to make some soon. I also discovered a new ingredient - Spaghetti Squash - and I did think about why and how that name came about. Tricia carified everything for me, and all the other unwitting out there, about the Spaghetti Squash. When ovenbaked, use a fork and scrape out the strands of squash - "This is where a first-time has the aha! moment: now you know why it’s called spaghetti squash!"

And last, but not least, my own ovenbaked zucchini and lemongrass with a salty peach and tofu sauce

And now what? Who is the winner? I absolutely love all your entries and is really hard to choose a winner. Somehow the dishes are similar, but, at the same time they're totally different. Paper Chef #56 roundup

Wow, what a treat! I'm so impressed! You all did such a tasteful and creative dishes. The roundup of Paper Chef #56 September 2010 was a small one, with only 5 entries, but so extensive in its flavour and they all seem very tasty and tempting to me. Now I just have to make up my mind and I will announce the winner during this week.

Ovenbaked squash and lemon grass with a salty peach and tofu sauce - PC #56 Sept. 2010

Time really do flies. I thought I had all the time in the world until time was up for the next Paper Chef. But no. It went so fast I hardley had time to close my eyes. I actually manage to cook something for September Paper Chef though, but now I have to write in English again, and it takes hours for me.


Right now is the best time for pumkins and funny looking squashes. The Farmers Market has a lot to offer. Unfortunately doesn't my wallet offer the same varieties. Therefore I used a common green squash; zucchihi. Then, I'm forutnate to have some square meters of soil outside my apartement where I can grow flowers, rhubarbs, gooseberries, strawberries (althogh all thousands of woodlice are eating them!) and herbs. My tarragon is my most treassured herb and I'm so happy the plant is getting a little bit larger every year. I did have a beautiful rosmary which lasted year after year after year. One day, last fall, when I came out to check on my little allotment, the whole rosemary plant was gone! Someone had taken it. There was a hole in the ground where it had grown for more than five years!
Any how, back to Paper Chef


0Ovenbaked stuffed zucchini with a salty peach- and toufu sauce
2 pers

500 g zucchini
2 red onions, finly shredded
2 sticks of lemon grass
2-3 tbsp oliv oil
tarragon, freshly chopped (use dry if you don't have fresh)
salt
black pepper


Finely slice the red onions. Wash and cut off about one third of the zucchini (about 200 g) and slice that part into thin shreds. Divide the large part of the zucchini in halfs and remove the core. Slice the core and add to the shredded once. Pour some olive oil and put the zhuccini-halfs in an ovenproof casserole and precook them, while frying the other vegetables, in the oven on 200 degrees Celsius for about 10-15 min.
Fry the onions and zucchini in olive oi, medium heat. Make sure not to burn anything. Rather cook the vegetables for some more minutes, on lower heat, than burn, or make it to dry, to fast.
Cut two sticks of lemon grass in two and crush the thick end (with help from the end of the knife handle). Put them in the pan, together with the onions and zucchini. Depending on what kind of skillet you have, you'll might need to add some water if it's too dry.

Take out the zucchini-halves. Fill them with the fryed vegetables, and put them back in the oven. Ovenbake for about 10-15 minuts or until the zucchini-halves are soft. During that time you can cook som whole food pasta and mix together the ingredients for the sauce.



Peach- and tofu sauce with capers


2 peaches, cut in pieces
3 tsp capers, medium size
150 g silk (soft) tofu
1 lime, squeezed
1 tsp dijon mustard

Mix all the ingredients. Taste. Eventually ad some more salt/capers, dijon mustard and pepper if you like. The colour isn't the most attractive but it sure taste the better. Serve with cooked fresh whole wheat pasta.


I do wish I had a larger mixer i my kitchen. This one does a lot of work for me, but sometimes it isn't good enough. Lucky for me the peaches where really nice and soft ;-)
I can't seem to get decent pictuers of my dishes. Either I use the flash and everything get all whiteish, or, no flash and everything is kind of yellow. I'm also trying to find out how to put two pictures beside each other...

Still blooming in the garden

The sunny, but cold, weekend is just over and gloomy monday is here. Or was here. Finally it is over. My weekend had a strong influence of migrain and I couldn't do anything of the things I planned. Yesterday though, I did some weeding in my tiny allotment. Although we've had some autumn in the air lately, there is still growing a lot. Stupid me though, who totally missed to gather the gooseberries. I did get almost 500 g rhubarbs though. Some of the spring flowers are blooming again but now is otherwise the autumn flowers just on the verge of full blossom. I do wish the sun will come back - soon!

I really try and try and try to like mondays, but most of the time I do feel like Garfield. I hate mondays. This particular monday I definitely should've stayed at home. In bed. Under my cover. My stomach hurts and I really do not like to go to my vocational place/occupational training place. I first met them in February this year. The first thing they said to me: "You'll never get a job here! Ther are no jobs here. Just so you know". That wasn't even my purpose at the time, but it sure did set the frames straight for me though. I was there for three months. I did a good job and they were pleased with my efforts. Then it was time for their vaccation and I had to go. When it was over, they wanted me back.

Because I still haven't manage to get a job, I'm really miserable to have to go back there. It is just so damn humiliating! It is just another mark in my life that I'm not good enough. A mark that just another couple of months of unemployment has passed. Hey you, look at the bright side you all think, huh. I know it isn't the best way of seeing things, and, if one more person tells me that I can change my life with only my thoughts - I'm ready to kill! I've nothing but changed my life since I was fifteen years old and I've manage to stay alive on my own for more than twenty years. For instance I've worked hard not to become as prejudiced as my parents, not as mean as my dad and a lot of my former classmates, friends, boyfriends etc. As many of you, I've always tried to do good, to do right, to help when I can, to not make a mess and I'm always practising on beeing more straight forward, to stand up for injustice and trying to use some of that civil courage (that we all should make use of) I know I have deep down etc. But oviously I'm not a good person anyway. That's why I don't have a job. At least that's what my supervisor told me today. Working people doesn't like to see sad unworking people - What is wrong with this world????

I feel like this slimy wierd thing that I found among my plants. It has the size of a tennis ball. I've seen it before. Last year I saw two. One day it had even exploded (or imploded?) and it was just an empty whole. What in the heck is that??

Ingredients for Paper Chef #56 September 2010


Oh my! Time is up for new ingredients to cook with in the September roundup of Paper Chef 2010. I have to say it was kind of comical that I actually won August's Paper Chef because I've made a comment about that, after we all had posted our entries. It was something about not wanting to win; "That my friends, is not something I would like to do, because all the entries are so delicious and tasteful!,"How is it possible to choose a winner? Ironic, huh.


Anyhow, the ingedients are drawn, and, I've chosen the 4th one too. I'm glad to present the ingredients for Paper Chef #56 September 2010, they are as follows: *

Capers
Peaches
Pumpkin/Squash and
lemon grass

In Sweden where I live, it is harvest time. Farmers markets are all over town and there is a lot nice and fresh vegetables in the stores. It might be some difficulties with the peaches though. They're kind of out of season, but I have faiht in finding some thoug :-) Since I'm a vegetarian I would like to have a vegetarian theme for this September roundup. You can make sallads, side dishes, but, how about making a vegetarian main dish. Or, maybe even as crazy and going raw! Of course, you'll decide what you're going to cook, but, no animals! If you're a vegan it is absolutely ok to replace ingredients such as dairy products, eggs, honey and so on with a vegan one. If you're allergic to any of the chosen ingredients you're welcome to replace them too. Come on now and challange your selves in the kitchen. See you soon!

Välkommen vackra dag!


Ett par meter upp från mitt köksfönster rotar sig detta vackra träd.
En dag, den där som man alltid väntar på då man ska få tid över, så ska jag göra något trevligt med alla mina årstidsbilder på detta träd.*
Allra bäst gillar jag det när det är helt kalt och grenverket tecknar sig mot en knallblå vinterhimmel. Eller mot en rosaskimrande vårhimmel. Då tar det inte heller så mycket ljus från mig här inne. Bilden är tagen i går men det är lika soligt, kallt och stilla idag, den 1 september. Ska detta bli hösten tro då det plötsligt händer.


* Ser ni den lilla vita fläck där uppe till höger om trädtoppen där den går ner igen för att möta trädet framför? Månen.
